Self-raising flour – 2 cups
Baking soda – 1 teaspoon
Baking powder – 2 teaspoons
Sugar – 2/3 cup
Salt – pinch
Melted butter – 4 tablespoons
Vanilla extract – 2 teaspoons
Buttermilk – 2 cups
Using a medium-sized bowl that will allow for comfortable handling and dextrous stirring, combine the dry ingredients, including the baking powder, baking soda, sugar and salt with the flour and then stir the mixture with a whisk.
Now add in the wet ingredients, including the vanilla extract, butter and buttermilk, stirring until the mixture is smooth. Take extra care not to stir the mixture too much as this may result in waffles which are a bit too heavy once cooked.
Set the mix aside and let it rest for between 15 and 20 minutes at room temperature.
Preheat your waffle maker, taking special care to follow the preheating instructions as per the manufacturer, then pour in the waffle mix and let it cook in the waffle iron for between two and four minutes, or according to the manufacturer’s cooking instructions. Transfer the cooked waffles to an oven set at a heat of 90 degrees Celsius as this will keep them warmed up and fresh while you continue with the rest of the mix.
